"Our Defiance Pinot Noir is a limited release, single vineyard wine made from grapes grown on our Defiance vineyard on Felton Road. The wine is selected from up to 5 different clones grown over 2 blocks on the vineyard.
The grapes for our 2016 Defiance were hand harvested between the 29th March and 13th April 2016, and were predominantly de-stemmed (15% were left as whole bunch) into open top fermenters and left to cold soak before fermenting. After fermentation the wine was aged in French Oak barriques for 10 months.
The 2016 vintage is dark purple with purple hues. The wine has a perfumed nose with fragrant violet, chocolate, tobacco and spice. Rich, sweet bright fruit on the palate with some cherry, clove, coffee and chocolate flavours. A weighty wine with ample, fine tannin and good persistence and minerality on the finish."

The wine combines fruit purity and elegance together with stylish savoury undertones, displaying lifted aromas of red/purple berry, floral and pomegranate notes with subtle infusion of cedary oak. The palate offers excellent concentration and focus, wonderfully supported by silky texture and fine, chalky tannins. Brilliantly structured and promises to evolve magnificently. "First harvest from Defiance was 2015, and all the Pinot was used for making rosé. So this is the first proper Pinot from this vineyard. Not all of the Pinot is used for the Defiance. About 7 barrels are selected for the final wine, and everything else goes into the Bannockburn Pinot Noir. Textural and fine with some silkiness, but also nice sour cherry and raspberry fruit, with some structural bite. There’s generosity but also freshness. A really impressive wine. Such a joy right now but with potential for development."

"Bright ruby-red colour with youthful purple hues, a little lighter on the rim. The nose is a little restrained in expression, but with elegance of proportion, with harmoniously melded aromas of dark-red berry fruit, dark and dried herbs, subtle whole bunch stalk perfumes and some spices and red florals that emerge in the glass. Medium-full bodied, the palate has vibrantly sweet and luscious fruit flavours of dark red berry fruit with raspberry liqueur notes along with a subtle layering of dark herbs, whole bunch stalk elements and a little spice. The fruit is still youthfully fresh, and is supported by good, fine-grained tannin structure and fresh acidity enhancing the fruit richness. The flavours carry to a sustained finish. This is a sweetly rich and vibrantly luscious Pinot Noir with fresh dark raspberry fruit with subtle notes of dark herbs and whole bunch stalk detail on a palate with plenty of fine grip and freshness. Match with lamb, beef and venison over the next 6-8 years. Hand-picked Pinot Noir fruit from the ‘Defiance’ vineyard, fermented with 15% whole bunches to 13.5% alc., the wine aged 10 months in 29 new French oak barriques."

"The elegant, very youthful 2016 vintage was estate-grown at Bannockburn and matured for 10 months in French oak casks (27 per cent new). Bright ruby, it is floral and generous, with strong, plummy, spicy flavours, showing excellent vigour and complexity, fresh acidity and a smooth finish. It needs time; open 2020+."
