Winery notes (2016 Vintage)
"The Pinot Noir grapes for our Brut are grown on vigorous soils however the cool climate keeps ripening slow and acids high. The perfect combination for selection for sparkling base. The Pinot Noir grapes were hand-picked and whole bunch pressed using a traditional light pressing regime. The juice was fermented cool in stainless tank and in barrel to dryness which was followed directly by malolactic fermentation. The wine was matured on lees without sulphur until tiraged early 2017. Stored on lees until first disgorement, November 2018.
The limited time on skins and long maturation on lees has given a very pale light straw colour to the wine. Aromas of peach, citrus, apple brioche and hints of nuttinesss lead to a lively, slightly creamy and delicate palate.
94/100 Cameron Douglas MS (2016 Vintage)
"Seductive aromas of ripe citrus flesh, stone fruit, stony mineral and layers of baked-goods-autolysis effect. Complex, full-bodied, spicy, fresh crisp and dry. Baked stone fruit, orange pith and brioche with a bold refined mousse."
Reviews for the 2015 vintage below…
5 Stars Michael Cooper (2015 Vintage)
"The classy 2015 vintage was disgorged from its yeast lees in May 2018. Pale straw, with a complex, yeasty fragrance, it is crisp and lively, with excellent vigour and intensity of citrusy, yeasty, biscuity flavours, and a dry (2 grams/litre of residual sugar), lasting finish."
