GREYSTONE BARREL FERMENTED SAUVIGNON BLANC 2016 is available to buy in increments of 1
This is outstanding Sauvignon Blanc. You could say it's an enhanced rendition of New Zealand's favourite variety. Naturally fermented for six months in French oak barrels with wild yeasts. Partial malolactic fermentation contributes complexity through the palate with rich fruit expression. The wine was naturally settled in barrel post fermentation, then blended and bottled on site without fining. The resulting wine shows fantastic richness on the palate yet it retains a lithe freshness throughout. ​Although the wine-making style hasn't changed, the new 2016 label now includes Barrel Ferment, to indicate the style.

"​Light straw in colour, this is a complex Sauvignon Blanc with restraint on the nose. Aromas of lemon curd, pineapple, gooseberry and fennel lead to a palate that is long and powerful. Tension filled with a chalky nature, tropical and stone fruits are interwoven throughout the palate. This finishes dry with long driving fruit-laden acidity."

"Offering fine value, the 2016 vintage was mostly (80 per cent) fermented with indigenous yeasts in old French oak barrels, and lees-aged in wood for six months. Full of personality, it's a drink-now or cellaring proposition."

"Bright, light straw-yellow colour with pale golden hues, lighter on the rim. This has a full and voluminous nose with softly packed aromas of ripe white and yellow stonefruits with suggestions of tropical fruit entwined with subtly complexing nuances of herbs, nuts and minerals. The aromatics show ripeness and refinement and unveil green stonefruit, nutty and toasty oak suggestions with aeration. Dry to taste and medium-full bodied, the palate is poised with fresh, crisp acidity enlivening the soft flavours of white and green stonefruits, herbs, nuts and minerals. The palate has a firm, concentrated core with the bright, zesty acidity lending a thirst-quenching mouthfeel. The wine follows a fine-textured line leading to a long, elegantly concentrated finisj of stonefruits and minerals. This is a bright, lively and refined, subtly rich and concentrated oak-influenced Sauvignon Blanc with white and green stonefruit flavours and nutty, minerally nuances. Serve with seafood and white meat dishes over the next 3+ years. Loire clones 376 and 530, indigenous yeast barrel-fermented with full solids to 13.5% alc., the wine aged 6 months on gross lees in seasoned oak with10% MLF. 2,890 cases made."
