Harvest occurs early in the morning and the fruit is then immediately pressed. Fermentation takes place in stainless steel cuves. A low temperature is kept while the wine is raised on fine lees in the cuve for eleven months and then is bottled in September. The freshness and delicate aromas of this wine make it a perfect partner with grilled fish and white meats, shellfish, roasted vegetables and oriental food.
Thoroughly crisp yet unctuous in texture, Champalou's Chenin boasts a nose of white peach, nectarine, and beeswax, which carries through to the palate. This vintage's touch of residual sugar provides muscle and weightiness that give way to a puckering finish.
